Recipe: Chicken Fajitas serves 4 1 pound of chicken breasts - boneless1 lime 2 teaspoons of sugar 1/2 teaspoon of garlic powder 1/2 teaspoon of onion powder 1 teaspoon of oregano 1/2 teaspoon of cumin 1/2 teaspoon of red pepper flakes 1 medium onion sliced3 medium bell peppers - sliced 1/4 teaspoon of salt 1/8 teaspoon of black pepper 1 tablespoon of olive oil 8 flour tortillas - warmed Slice chicken into thin strips approximately 3 inches long and set them in a flat glass baking dish.Squeeze the juice from one lime on top of the chicken.Mix together sugar, garlic powder, onion powder, oregano, cumin, and red pepper flakes and sprinkle the spices onto the chicken being sure to coat all the chicken.Pre-heat your oven to 325 degrees. Wrap eight flour tortillas in a clean dish towel and put them in a serving dish. Cover the dish with tinfoil and put it in the oven for about 10 minutes to warm up. Preheat your oven safe serving dish in the oven as well.In a large preheated frying pan, heat 1 Tablespoon of olive oil over medium high heat. When the oil shimmers, add the sliced onions and pepper and saut 2-3 minutes or until tender. Season with salt and pepper and remove from pan. Place on heated serving dish. Cover with tinfoil to keep warm.Add the chicken to the hot pan and quickly saut until cooked through approximately 4-5 minutes.Add the cooked chicken to the serving platter.Place warm tortilla on a plate; add chicken and peppers and onions and serve.You can garnish Chicken Fajitas with salsa, guacamole, shredded cheese and sour cream.

Recipe: Vegetable and dip platter serves 4 1 red, green, and or yellow pepper 1 pint of grape tomatoes 4 round pita bread 3 carrots 3 small pickling cucumbers 2 stalks of celery 1 pint of hummus Wash all the vegetables. Peel carrots and cut into 2 inch strips. Trim the ends and then cut the celery into 2 inch strips. Cut cucumber into 2 inch strips. Cut peppers in half and remove the stem and seeds, then cut into strips. Cut pita bread into triangles Arrange all the vegetable and the pita bread on a decorative platter. Serve with hummus or your favorite dip.
Hot oil burns my flesh(this is set to Japanese pop music) and then I deep fry a roll of paper towels!I read cookbooks the way some women read romance novels, but I there are certain recipes that make me feel more like I'm reading a Stephen King novel. They fascinate and thrill me, but when I think about cooking them myself, I get scared. So what am I afraid of? Lobsters attacking!? Sauces curdling!? Anything with live yeast!? Some complicated sounding French recipe, like Gigot d'Agneau la Bretonne!? Yes! I mean, no! I mean Hell No! I am determined to conquer my culinary fears, and cook the very dishes that scare me most. I've always steered away from anything requiring a vat of boiling oil. I love, love, love, fried food, but there's the whole mess... the oil splattering up, disfiguring and blinding me... the fact that fried food tastes best hot or it goes limp... grease on the walls, and the house smelling like a fry-o-later... and of course the next day what to do with a cool vat of oil. But I'm set on overcoming my fears, so tonight I made tempura.
